Raw cacao truffles/ Truffes de cacao cru

This is my last recipe before christmas and believe me those raw truffles are very tasty, it can be a nice homemade present too.

I have decided this year I would me making my own chocolates and not buy any of industrial sweets during the festive season.

These raw chocolate balls are made with three ingredients only. Simple, healthy and wholesome. I would recommend using organic or natural dates with no added sugar or syrup to ensure the raw balls do not become too sweet and too sticky.

 

Cette recette sera la dernière jusque noël et croyez moi ces petites truffes aux chocolat sont un vrai délice.

J’ai decidé cette année de ne pas acheter de chocolats industriels mais de les faire moi meme, surtout pendant cette periode de fêtes. 

Juste 3 ingrédients pour réaliser ces truffes aux chocolat, simples et délicieuses. Déposer les truffes dans un bocal en verre pour un cadeau fait maison 

Je recommende d’utiliser des dattes de bonne qualité, sans sucre ajouté ou de sirop pour être sur que ça ne sois pas trop sucré

 

 

Raw chocolate truffles

Ingredients
  1. 1 cup of pecan nuts
  2. 2 cups of medjool dates
  3. 3 to 4 TBS of raw cacao + extra for the coating
  4. Cinamon (optional)
Instructions
  1. Place the pecan nuts in a food processor. Process until finely ground
  2. Add the medjool dates little by little and process again for 2 minutes.
  3. Add the cacao, process again.
  4. You can add a pinch of salt and cinamon if you wish
  5. Process until you get a dough.
  6. Once you get a dough scoop one spoon and roll it into a ball.
  7. Make the balls and roll it into raw cacao
  8. Place in the freezer for 30 minutes or the fridge for 2 hours

Truffes de chocolat cru

Ingredients
  1. 1 tasse de noix de pecans
  2. 2 tasse de dattes (medjool de préférence)
  3. 3 à 4 C a S de cacao cru
  4. Pinch de canelle (facultatif)
Instructions
  1. Déposer les noix de pecans dans un robot (utiliser la lame S). Mixer pour obtenir une texture poudreuse.
  2. Ajouter les dattes petit à petit et continuer à mixé.
  3. Ajouter le cacao cru et mixer encore pendant 2 minutes jusqu'à ce que le tout soit homogène et se Tienne ensemble.
  4. Former des boules avec une cuillère a soupe.
  5. Recouvrir les boules de cacao cru.
  6. Deposer dans le frigo pendant 2 heures ou 30 minutes dans le freezer
  7. Et voila xxx

Kolhrabi leave wraps

I have been so busy lately i didn’t have time to write or post any new recipes.

I got my first delivery from Al Shuwib farm last week and i am so happy about it!!!  so today i would like to write about those beauties ” Kohlrabi”

The health benefits of kohlrabi are amazing it can help to lose weight,  boost the immune system , regulate the metabolism, increase circulation, strengthen bones and improve vision health. Kolrhabi is full of nutrients and minerals like copper, potassium, manganese, iron and calcium. Vitamins such as vitamins C, vitamin A and vitamin K.

Kolhrabi leaves are also  nutritious , the young greens are very flavorful, it has a similar taste to collard greens. The leaves can be steamed, chopped in salads or simply used as bread replacement for the wraps, like you can see on the pictures below.

For the wraps i have used 5 Kohlrabi leaves, added some turmeric white bean hummus, cucumbers, grated carrots and Kolrhabi, but feel free to change any vegetables or dip.

I hope you will like these rolls, they are very easy to make, perfect for pack lunch, family diner or pic nic

Ingredients
  1. 1 cup of rolled oats (GF)
  2. 1 cup 1/2 of almond milk
  3. 1 tbs of chia seeds
  4. sunflower & pumpkin seeds
  5. 2tbs dried raisins
  6. 2 tbs of raw almonds
  7. any topping and fresh fruits
  8. Coconut sugar (Optional)
Instructions
  1. Place the oats and the milk in a big bowl, stir well.
  2. Add the chia, seeds and almonds
  3. Place in the fridge overnight.
  4. Next morning place in jars and add the coconut sugar and pomegranate seeds
Notes
  1. You can add anything you like
  2. Et voila

Easy kale salad with molasses marinade

If you know me by now you will notice how crazy i am with kale. One of my favorite way of using kale is to make salads, you can marinate the kale in differents ways and add anything you like.
Few days ago i tried a molasse based dressing… So delicious 
Blackstrap molasses is a very healthy sweetener, a  good source of iron.
Two tablespoons of blackstrap contain 13.2 percent of our RDI of iron, which our bodies need to carry oxygen to our blood cells. People who are anemic (including pregnant women) will greatly benefit from consuming 1-2 tablespoons of blackstrap molasses per day.

This salad is very easy to make and perfect for pack lunch.

Ingredients
  1. 1 bunch of kale (washed, ribs removed, finely chopped)
  2. 2 cups of red cabbage (finely chopped)
  3. 2 peppers (cut in small cubes)
  4. 1 shallot (finely chopped)
  5. 1/2 cup of almond flakes
  6. Edible flowers
Molasse dressing
  1. 2 tbs of olive oil
  2. 2 tbs of aplle cider vinegar
  3. 1tbs of molasses
  4. 1 garlic clove
  5. 1 tbs of tamari sauce
  6. 1/2 cup of water
Instructions
  1. To make the marinade, place all the ingredients in a small blender. Blend until smooth.
  2. Remove the ribs of the kale and wash it. put half of the marinade and the kale in a bowl.
  3. Massage gently with your hands.
  4. Set aside for 1 hour.
  5. Add the peppers, shallots and red cabbage,stir well.
  6. Preheat a pan, place the almond flakes for 3 minutes
  7. Add the almonds to the salad and enjoy.
Notes
  1. The salad will last for 1 full day. so it is perfect for pack lunch

Raw cauliflower & beetroot maki rolls

Those raw maki rolls are my little addiction at the moment, when I don’t have time to prepare anything I go for the maki rolls or summer rolls !! There are easy to prepare, nice idea for pack lunches and so colourful I love them 😍

Ingredients
  1. 1 cup of cauliflower
  2. 1 cup of beetroot
  3. 1 avocado (finely in slices)
  4. 1 cucumber (finely sliced)
  5. Any sprouts
  6. Nori sheets
  7. 1tbs of miso paste
  8. Mint
Instructions
  1. Place the cauliflower & beetroot in a food processor, process until crunchy.
  2. Set aside
  3. Slice the avocado & cucumbers
  4. Place a nori sheet on a bamboo rolling mat
  5. Brush the edge of the nori with 1/4 ts of miso paste
  6. Place the cauliflower/ beetroot mixture , avocado,sprouts & cucumbers
  7. Start rolling away from you, keeping the roll tight.
  8. The miso paste should stick the roll at the end.
  9. Cut in slices and dip it in tamari sauce

  1. You can mix any vegetables

Berries/ banana ice cream

Another easy ice cream recipe this morning ❤️

Easy, low fat, and full of nutrients.

Bananas are a good source of vitamin B6, vitamin C, folate, manganese, potassium, magnesium.

Berries are a excellent source of vitamin C, low in calories, high in fiber and rich of nutrients

  2. 1/2 cup of fresh blueberries
  3. 1/2 cup of strawberries
  4. 1/2 cup of frozen blackberries
  5. 1/2 cup of coconut cream or milk

Prenatal massage workshop

Two months ago I participated in a prenatal massage workshop in Abu Dhabi taught by Vandana.  She is a very nice lady, Vandana is a qualified, committed and intuitive Holistic Therapist who believes that the body is fully capable of healing itself. Her expertise in Holism includes Angelic Reiki, foot and facial reflexology, prenatal reflexology, Indian head massage/trainer. Vandana is running regular workshops on various topics such as: Learning to communicate with angels, Prenatal massages techniques, Head massage, Organic & Natural personal skin care and faciaIs. She is a contributing author to the ‘Empowerment Manual’ published by Visionary Insight Press USA; currently available on Amazon and Barnes & Noble websites.

 

I first met her towards the end of my pregnancy when I took a few reflexology sessions with her. It was the first time I had reflexology treatments, I felt very good and after the sessions, feeling very light and peaceful.  She is truly amazing so when she proposed this workshop I didn’t hesitate and signed up for the course.

 

The course started in the morning with two trainees and two lovely pregnant ladies acting as our practice clients for the course. Vandana taught us how to massage the back, neck, head, hands and feet. It wasn’t easy at first to learn everything and feel confident. Even if I am used to give massages to my friends and family – especially to my son, I felt a little clumsy at the beginning but as the course progressed, I felt more confident.  I am always happy to learn new things, so the experience was rewarding.  

 

As a newly certified Doula, I am interested in all things related to pregnancy and well-being. A prenatal massage can be beneficial throughout the pregnancy, during labour and after the birth. The massage can be done to relieve the pain or tiredness felt during pregnancy, but also when feeling a little tense. It can also help improve blood circulation, mood, get a better sleep, decrease the level of stress hormones, help with relaxation and relieve tension and joint pains. Sometimes, especially towards the end of the pregnancy, feet and hands can become tired, doing a lymphatic massage can help reduce edema and giving a nice feeling of lightness. During the labour, massaging the back and using breathing technique can be a drug-free alternative choice for pain management. The massage techniques are easy to understand and can be taught to the partner. It can be a good idea to have the partner practicing these massage techniques regularly so when the time comes the technique are well-known.

 

Doing this workshop was very useful and has helped me to understand how to help my clients feel better during the pregnancy and how simple massage technique can have a big impact on your body and mind, help to feel more relaxed and release tensions. I also recognize that if it is an option, it is good to get the partner involved and learn some of the techniques.

 

I am looking forward practicing those massage techniques on my clients in the near future, so get in touch if you are interested.

Coco/ banana ice cream

Sometimes we just want to stay in bed, watch a good movie and eat an ice cream!!! this is what happened to me this week end. This coconut, vanilla and banana ice cream is a winner.
