How do we even begin to describe the 24 July 2016 and how you were there for us every step of the way. We had called you at 5am and within an hour you were at our house. You were there to witness the most life changing experience of our lives, you witnessed Ethan join the world and take his first breath, you were there to see us over flowing with emotion and the transition of us becoming parents.

Holding the bucket for me from the backseat of the car while I was being ill on the way to the hospital, to fetching and bringing things from the car so Martin could stay with me, to rubbing my back and holding my hands. I really believe that people project emotions onto others and on that day, your calmness and inner strength by just being in the room, I think contributed to me having the wonderful birth I had. Living an expat life without friends and family nearby can be quite isolating and lonely. Having you there with me was like having a lifelong friend or a sister by my side.

I don’t think I every told you why we wanted you as our Doula. I had already made my decision that day Martin and I met you at Reem island La Brioche briefly for a chat. It was because I appreciated the way you protected me from your story, only hinting to the fact that you had a difficult experience, but managed to get through it unmedicated. I felt that if I had you by my side, having gone through whatever your hard experience was, that you’d be able to support me though my experience. I felt like you were an inspiration, in the sense that if you could, then so could I. It was one of the first moments I felt that my wish of having an unmedicated birth could be a reality, having met someone who did it. We did have another choice of a doula who we met with; she was friendly and warm but didn’t leave me feeling the same as you did. It confirmed that I didn’t want anyone else except for you. I can’t pin point the other reason or really explain it in words, it was more than just the tone of your voice or things like that, and it was a gut feeling.

You were there for me on the most difficult day of my pregnancy, a week before he was born when we saw 2 Doctors who wanted to induce right away. You came to my house, we shared a cup of tea and you gave me the most wonderful and relaxing lavender massage to release all my frustration and tension for the day. Martin had to be at work, having you there with me and the chat we had that afternoon made me feel like I wasn’t alone. You listened to my thoughts and what had happened that day. Martin was so happy you came; he didn’t want me to be alone. Your support gave me strength and I will never forget sitting on the exercise ball smelling the lavender while relaxing. You seemed to know just what I needed.

That morning for me is blur. I laugh now at the suitcase filled with the TRX, candles, massage oil, birthing ball, 30+ hypnobirthing affirmation pictures, dates, nuts, crackers, lollipops, headphones and laptop with music and video visualisations. All I needed there was you and Martin (and my coconut water).

A day after the birth, your familiar face in a sea of strange faces in the hospital was most welcome, and the smoothie you brought me, was such a lovely and thoughtful gift filled with good nutrients my body needed.

I don’t feel our relationship will ever come to an “end”, the part you played in the birth of our son will always stay with us. You are part his journey and life story. A thousand thank you’s would never be enough for us to express how grateful we are to you.

We absolutely loved our doula, and hopefully can answer all the questions here. We looked for a doula, as we wanted a more natural birth and were far away from family and loved ones. The idea of a nurturing, educated third party to help us navigate the immensity of this new situation was very appealing. We interviewed a few candidates and chose Marliyne because of her fantastic positive spirit, organization, knowledge, confidence, and forthrightness. During my pregnancy she checked in on me frequently either personally or via phone and was always available if I needed any question answered.

Unfortunately due to unexpected circumstances I had to have an emergency c-section due to a severe bacterial infection, and even though Marilyne did not participate in the birth in the way she and we thought originally, she was an integral part in my recovery and offered us guidance and support to breastfeed and in many other ways during the most terrifying experience of our lives. She came daily to check on us and brought us smoothies and mostly her calm, and kind prescense which is all we really needed at that time. She will always be part of our story and we are so grateful to her. 

We thought it was a good idea to have someone with us before, during and after the birth who had some experience.

When Marilyne came and we met with her we thougth she would be the right person to do this with us. We felt comfortable around her. She helped us with a birth plan and we discussed with her what we would like and would not like about giving birth in a hospital here in the UAE. It also helped that she knew our doctor and had a couple of good experiences with her. She was very warm and reassuring to us first time parents. We felt being in safe and expert hands. She helped us decide when was the right time to go to the hospital, she stayed with us and was calm and it was great for me to be able to talk to her. She created a comfortable atmosphere in the hospital room and it felt comforting to have her around.

 Marilyne came and we talked at length about the birth exprerience which was great for me. I needed to go through it again. She would also give very helpful insights and ideas into how to deal with our newborn.

The listening and being understood part was very helpful and great for me. I felt Marilyne was capable of a lot of empathy.She has been a good motivator during labor. She helped with the breathing and in dealing with the contraction pain. She was a great emotional support.

Living in a foreign country with no family around is hard and it doesn’t help when they cannot be here for the birth of your child. We hired a doula primarily for support and to avoid a C section and Epidural.

Marilyne was recommended to me by a friend and I am so glad we went with her, she was such a fantastic birth coach and partner.

Marilyne provided outstanding support to both myself and my husband, was on hand when we needed her.  She really helped me relax and alleviated my worries about giving birth I was more anxious about this birth than I was with my first.  Marilyne also provided some amazing and healthy snacks before and after the birth. During labour Marilyne was an absolute star! She had a calming influence, helped me with breathing, gave me a fantastic massage and really held it together for me, especially at transition stage, encouraging me to get up and move to help things progress.

After birth, Marilyne has been, and still is an amazing support to me after the birth. She visited the hospital to check in on us , bringing with her a fantastic lactation smoothie to help with my milk supply.

Marilyne really listened to what we wanted to get out of the birth and was completely non-judgmental when I had pethidine on my birth plan

I thought Marilyne was an amazing Doula.  She is very calm, collected and an attentive listener.  I don’t thing there is anything ti improve at all.

if we have another she will be the first person after my husband I will tell and would most definitely look for her support again.  We keep in touch now and she is such a lovely person.

As living abroad with no immediate family around and no nanny for my 3 yo son on autism spectrum I wanted to make sure that I’ll be able to give birth in supportive and calm spirit along with my husband who was very anxious about being present only by himself for delivery. I wanted to have a person present for my delivery who will stand for my rights and my preferences how to bring my baby to this world, also knowing the situation in this country (preferred medical delivery, C-sections, epidural etc.) I wanted to make sure that my wish to deliver my son in most natural way will be followed through.
 
 
Marilyne was available and she responded immediately and she appeared very supportive about my husband special approach (my husband is HFA difficulties with empathy or emotional support)
 
 
Marilyne really worked well for my husband, she was patient and encouraging for my husband to gain confidence about the birth and his presence there.
I found Marilyne very supportive and engaged during our pre-birth sessions. She was genuinely positive and excited about natural birth and very supportive on alternative methods of pain release and relaxation techniques.
 
Marilyne met us for very supportive chat just the late afternoon before I went into labor and it really helped me and my husband to feel relaxed and confident about her support and help.
The first phase of labor I spent at home with my mum, my son and my husband, very calm and ready for birth as the meeting with Marilyne really put me in relaxed mode.
Marilyne came to hospital very quickly and she made sure that she voiced all my requests and preferences to medical team. She supported and encouraged my husband who bravely despite his anxiety and emotional meltdown went through the whole labor, supporting me and be there for us.
She was very kind, encouraging but also firm with medical team as my doctor wasn’t really share a lot of information with us.
 
 
Marilyne stayed in hospital longer as I was having uterus bleeding, making sure that all the time there is either herself or my husband with me. She expressed a lots of praise to me which mentally really helped me, especially during the heavy bleeding and uterus massage and stitching the perineal tears.
 
Marilyne was exactly following my birth plan and tried her best to accommodate all my preferences with medical team. She understood my approach and supported me during painful stages without any medications or epidural when I was loosing motivation and strength.

I needed the support of someone other than my mother, specifically someone without a prior emotional attachment so that she can help me without being affected by my pain. My previous birth didn’t go as planned, my mother gave her approval to the midwife on things I was against. My mother was in pain seeing me like that; and being that it was my first birth, I feared everything and listened to her. I also wanted to labor freely without being shy of the person with me.

Marilyne helped me  in many ways:

I was confident in the choices I made in the birth plan, we found great positions for when labouring would startI was comfortable to know that she’s a phone call away when I needed her.I also enjoyed a nice back massage!She looked up things I was reading about and asked whoever she knew (even though we didn’t do it during labour “heat compress”)

During labour she rushed straight from the gym once I called her. She forgot her self and was selfless. I told her to meet at the hospital but she insisted on coming straight to my home. I felt another person will put themselves first, go home and change, and then come. I really had to put this as #1

Marilyne gave  the birth plan to the nurses once we arrived, they came and quieted all the machine noises and in that instance I felt completely calm we were talking and chatting during the start of labor, timing the contraction, suggesting the positions that we agreed onI also liked the soft rubbing on my back. She brought me back to reality and talked to me when I was pushing the baby out, since I was just repeatedly reciting Quran without focusing. She knew I was panicking that moment. In our previous meetings we discussed this moment more than once and that I needed her to shout at me if I lost it. Marilyne also helped me focus on her only and breathing togethers, she remembered all my wished when the father came, since I wanted to be covered. The moment she saw him she turned to check on my state and cover me up.

After birth, Marilyne checked up after a couple of weeks and gave me feedback on all my concerns. I was really happy to talk about how the birth went and the strong moments that we were both proud of. We were a great team together. She completely understood my needs since we kind of shared the same ideas of our birth wishes.

Marilyne was a great strength during the labor, calm and not stressing me at all. That was really an important point to me. She kept pushing me with her words of encouragement. The only missing loop that I was not happy with was the language barrier. I felt she was lost with what they were saying. I sensed her worry for me and if they were doing something against our agreed birth plan. But she tried her best by asking the midwife every now and then.

It was the best birth experience I could ever ask for. Thanks to Marilyne I had a positive birth. I hope she’s still here when I have my third baby!

 

 

 

 

Raw cacao truffles/ Truffes de cacao cru

 

This is my last recipe before christmas and believe me those raw truffles are very tasty, it can be a nice homemade present too.

I have decided this year I would me making my own chocolates and not buy any of industrial sweets during the festive season.

These raw chocolate balls are made with three ingredients only. Simple, healthy and wholesome. I would recommend using organic or natural dates with no added sugar or syrup to ensure the raw balls do not become too sweet and too sticky.

 

Cette recette sera la dernière jusque noël et croyez moi ces petites truffes aux chocolat sont un vrai délice.

J’ai decidé cette année de ne pas acheter de chocolats industriels mais de les faire moi meme, surtout pendant cette periode de fêtes. 

Juste 3 ingrédients pour réaliser ces truffes aux chocolat, simples et délicieuses. Déposer les truffes dans un bocal en verre pour un cadeau fait maison 

Je recommende d’utiliser des dattes de bonne qualité, sans sucre ajouté ou de sirop pour être sur que ça ne sois pas trop sucré

 

Raw chocolate truffles

Ingredients
  1. 1 cup of pecan nuts
  2. 2 cups of medjool dates
  3. 3 to 4 TBS of raw cacao + extra for the coating
  4. Cinamon (optional)
Instructions
  1. Place the pecan nuts in a food processor. Process until finely ground
  2. Add the medjool dates little by little and process again for 2 minutes.
  3. Add the cacao, process again.
  4. You can add a pinch of salt and cinamon if you wish
  5. Process until you get a dough.
  6. Once you get a dough scoop one spoon and roll it into a ball.
  7. Make the balls and roll it into raw cacao
  8. Place in the freezer for 30 minutes or the fridge for 2 hours

Truffes de chocolat cru

  1. 1 tasse de noix de pecans
  2. 2 tasse de dattes (medjool de préférence)
  3. 3 à 4 C a S de cacao cru
  4. Pinch de canelle (facultatif)
Instructions
  1. Déposer les noix de pecans dans un robot (utiliser la lame S). Mixer pour obtenir une texture poudreuse.
  2. Ajouter les dattes petit à petit et continuer à mixé.
  3. Ajouter le cacao cru et mixer encore pendant 2 minutes jusqu'à ce que le tout soit homogène et se Tienne ensemble.
  4. Former des boules avec une cuillère a soupe.
  5. Recouvrir les boules de cacao cru.
  6. Deposer dans le frigo pendant 2 heures ou 30 minutes dans le freezer
  7. Et voila xxx

Raw vegan almond & zaatar cheese / Fromage cru vegan aux amandes et zaatar

 

 

Christmas is around the corner and what a better time to think about a few health recipes to add to all the goodies you will be having. I know it’s not really the time of the year when low-fat dishes are on our mind, but if you are a little concerned with the calorie intake, you can easily swap a few dishes with healthier options. 

 

I am sharing a beautiful tasty and yummy recipe for a raw vegan almond & zaatar cheese spread. It is rich in protein but low in fat and is simply delicious on crackers, sourdough bread or baguette. 

 

Les fêtes arrivent à grand pas et c’est le bon moment de penser à des recettes saine et facile à réaliser.
Aujourd’hui je vous propose un fromage cru et vegan aux amandes et zaatar, riche en protéines et faible en gras,  délicieux avec du pain ou des crackers. 

 

 

 

 

Raw vegan almond & zaatar cheese

Ingredients
  1. 1 cup of almonds (soaked, drained & skin removed)
  2. 1/4 cup of water
  3. 2 TBS of olive oil
  4. 2 TBS of nutritional yeast
  5. 3 TBS of lemon juice
  6. 1 TS of agar agar + 2 TS of water
  7. 1 TS of zaatar (feel free to add more for a stronger taste)
  8. 1 garlic clove
  9. Pinch of salt
Instructions
  1. Soak the almond for 2 hours in hot water, remove the skin. It takes a little time but it is easy.
  2. Place the almonds, garlic,nutritional yeat, lemon juice, zaatar, olive oil, and the salt in a food processor.
  3. Process until smooth
  4. In a small saucepan, add the agar agar and water, stir for 15 seconds, pour the mixture in the food processor. Process again for 1 to 2 minutes
  5. Place a little of olive oil in a ramekins, depending on the size you might need 2 or 3 ramekin.
  6. Pour the mixture and place in the fridge for 2 hours.
  7. Unmold the cheese and place on a plate.
  8. Serve with raw crackers, raw veggies, baguette
Notes
  1. Nutritional yeast is available at Organic food cafe.
  2. I have seen it at lulu supermarket too for about 30 aed
  3. It can be kept for up to two weeks in the fridge and only takes about 10 minutes to prepare and 2 hours to set.

Ingredients
  1. 1 tasse d'amandes (trempé, peau retirer)
  2. 1/4 tasse d'eau
  3. 2 C a S d'huile d'olive
  4. 2 C a S de levure maltée
  5. 3 C a S de jus de citron
  6. 1 gousse d'ail
  7. 1 C a S de zaatar
  8. 1 C a C d'agar agar + 2 C a c d'eau
  9. Sel, poivre
Instructions
  1. Faire tremper les amandes dans un bol rempli d’eau chaude pendant 2h.
  2. Retirer la peau ( ça prend un peu de temps mais reste facile).
  3. Déposer les amandes, la levure maltée, citron, zaatar, huile d’olive et le sel dans le robot ( utiliser la lame S).
  4. Mélanger le tout pendant 1 minute.
  5. La préparation doit être lisse et homogène.
  6. Dans une petite casserole ajouter l'agar agar avec l’eau, mélanger pendant 15 secondes.
  7. Verser le liquide dans le robot et faire tourner pendant 1 a 2 minutes.
  8. Préparer 2 à 3 ramequins et déposer un peu d’huile d’olive ( le fromage se démoulera plus facilement)
  9. Remplir les ramequins de fromage , déposer dans le frigo et laisser refroidir pendant 2 heures.
  10. Démouler les fromages dans une belle assiette.
Notes
  1. Si vous ne trouvez pas de zaatar, les herbes comme le thym, le romarin ou herbes de provence seront très bien.
  2. Les fromages se gardent 1 semaine au frais

What a wonderful introduction to raw food cooking! Simple, instructive, personalised and most importantly; tasty!!! Marilyne comfortably took us through the steps of her very well selected own recipes of delicious raw dishes. A workshop designed for those new to the concept of raw food, who would like to change their way of eating. Discover raw cooking techniques, what to store in your kitchen pantry.

Learn how to make healthy and easy recipes, sprout pulses, dehydrate fruit & veg and make your own crackers.

The workshop includes preparation of dishes, making them, tastings, going through nutritional topics, shopping list, and equipment basics. 

A  workshop folder with recipes and all topics covered will give you the confidence to start introducing more raw food into your daily life.

All products used are vegan, organic and where possible locally sourced.

Tabouleh salad / Taboulé de légumes crue

We had such a good time in Europe this year. It was great to be surrounded by good friends. Amazing time in Bretagne, Paris, Berlin and London

This tabouleh salad is very easy to prepare, the couscous can be replaced by quinoa or millet (for a GF version)
Eating healthy without spending too much time in the kitchen … It was our summer goal!

Ce petit taboulé est facile a préparé, ont peux facilement remplacée le taboulé par du quinoa ou du millet (pour une version GF) Manger sainement sans passée trop de temps en cuisine! c’etait le but de l’été.

Ingredients
  1. 1 cup of couscous
  2. 1 cup of hot water
  3. 2 tbs of olive oil
  4. half cup of chick peas
  5. 2 to 3 tomatoes (cut in small cubes)
  6. 2 small cucumbers (cut in small cubes)
  7. Shallots
  8. Mint
  9. Parsley
  10. 1 handful of dried raisins
  11. Lemon, olive oil, salt, pepper to taste
Instructions
  1. Place 1 cup of couscous in a bowl, add 2 tbs of olive oil, stir well, add the hot water.
  2. Stir well, set aside for 10 minutes.
  3. Stir again the couscous should be ready. Allow to cool down for 1/2 hour
  4. Cut the tomatoes, cucumber, shallots.
  5. Chop the mint & parsley
  6. Place in a big salad bowl add the couscous.
  7. Drizzle some lemon juice & olive oil, add salt & pepper.
  8. Place in the fridge for 1 hour
  9. et voila Tabouleh salad is ready

  1. If you want to eat the salad later do not put the lemon juice.

Ingredients
  1. 1 tasse de couscous
  2. 1 tasse d'eau chaude
  3. 2 c a s d'huile d'olive
  4. 1/2 tasse de poix chiches
  5. 2 tomates (coupé en petit dés)
  6. 2 petits concombres (coupé en petits dés)
  7. Menthe
  8. Persil
  9. Echalotte
  10. 1 poignée de raisins
  11. Jus de citron, huile d'olive, sel et poivre
Instructions
  1. Mettre le couscous dans un bol, y ajoute les 2 cuillères a soupe d'huile d'olive puis l'eau chaude, Remuer légèrement puis laisser reposer pendant 10 minutes.
  2. Une fois le couscous prêt laisser refroidir pendant 1 heure.
  3. Couper les tomates, concombres en petit dés, ciselé la menthe et le persil.
  4. Metter le tout dans un grand bol a salade.
  5. Rajouter le couscous, assaisonner de citron, d'huile d'olive, sel et poivre.
  6. A manger de suite ou laisser reposer dans le refregirateur pendant 1 heure

Ingredients
  1. 1 cup of rolled oats (GF)
  2. 1 cup 1/2 of almond milk
  3. 1 tbs of chia seeds
  4. sunflower & pumpkin seeds
  5. 2tbs dried raisins
  6. 2 tbs of raw almonds
  7. any topping and fresh fruits
  8. Coconut sugar (Optional)
Instructions
  1. Place the oats and the milk in a big bowl, stir well.
  2. Add the chia, seeds and almonds
  3. Place in the fridge overnight.
  4. Next morning place in jars and add the coconut sugar and pomegranate seeds
Notes
  1. You can add anything you like
  2. Et voila

Vegan banana pancakes & raw chia/berries jam

I am finally posting the recipe of my 5 ingredients vegan banana pancakes along with my favorite raw jam. The jam is delicious and packed with good things. It can be store for 10 days in the fridge.

So easy and healthy it is a winner at home.

Vegan banana pancakes & raw chia /berries jam

Ingredients
  1. 1 cup of gluten free flour
  2. 1 1/2 cup of almond/rice or oat milk
  3. 1/2 ts of baking powder
  4. Pinch of salt
  5. 2 to 3 bananas
Raw chia/berries jam
  1. 1 cup of berries ( raspberries, blackberries, blueberries)
  2. 2 tbs of blackstrap molasses
  3. 1 to 2 tbs of chia seeds
  4. 1ts of lemon juice
Instructions
  1. Place the bananas and the almond milk in a high speed blender. Blend until smooth.
  2. Place the flour, baking powder and salt in a bowl, pour the flour mixture into the banana mixture.
  3. Preheat a pan with a little coconut or canola oil, pour 3 to 4 tbs of batter on the pan.
  4. Cook for 3 minutes or until the pancakes are golden on both sides.
Raw chia jam
  1. Blend the berries, lemon juice & the molasses in a small chopper or food processor, process until well combined.
  2. Place the mixture in a bowl , add the chia seeds and leave it in the fridge for 1 to 2 hours.
Notes
  1. The jam can be kept up to 10 days in the fridge

Easy kale salad with molasses marinade

If you know me by now you will notice how crazy i am with kale. One of my favorite way of using kale is to make salads, you can marinate the kale in differents ways and add anything you like.
Few days ago i tried a molasse based dressing… So delicious 
Blackstrap molasses is a very healthy sweetener, a  good source of iron.
Two tablespoons of blackstrap contain 13.2 percent of our RDI of iron, which our bodies need to carry oxygen to our blood cells. People who are anemic (including pregnant women) will greatly benefit from consuming 1-2 tablespoons of blackstrap molasses per day.

This salad is very easy to make and perfect for pack lunch.

Ingredients
  1. 1 bunch of kale (washed, ribs removed, finely chopped)
  2. 2 cups of red cabbage (finely chopped)
  3. 2 peppers (cut in small cubes)
  4. 1 shallot (finely chopped)
  5. 1/2 cup of almond flakes
  6. Edible flowers
Molasse dressing
  1. 2 tbs of olive oil
  2. 2 tbs of aplle cider vinegar
  3. 1tbs of molasses
  4. 1 garlic clove
  5. 1 tbs of tamari sauce
  6. 1/2 cup of water
Instructions
  1. To make the marinade, place all the ingredients in a small blender. Blend until smooth.
  2. Remove the ribs of the kale and wash it. put half of the marinade and the kale in a bowl.
  3. Massage gently with your hands.
  4. Set aside for 1 hour.
  5. Add the peppers, shallots and red cabbage,stir well.
  6. Preheat a pan, place the almond flakes for 3 minutes
  7. Add the almonds to the salad and enjoy.
Notes
  1. The salad will last for 1 full day. so it is perfect for pack lunch

Raw cauliflower & beetroot maki rolls

Those raw maki rolls are my little addiction at the moment, when I don’t have time to prepare anything I go for the maki rolls or summer rolls !! There are easy to prepare, nice idea for pack lunches and so colourful I love them 😍

Ingredients
  1. 1 cup of cauliflower
  2. 1 cup of beetroot
  3. 1 avocado (finely in slices)
  4. 1 cucumber (finely sliced)
  5. Any sprouts
  6. Nori sheets
  7. 1tbs of miso paste
  8. Mint
Instructions
  1. Place the cauliflower & beetroot in a food processor, process until crunchy.
  2. Set aside
  3. Slice the avocado & cucumbers
  4. Place a nori sheet on a bamboo rolling mat
  5. Brush the edge of the nori with 1/4 ts of miso paste
  6. Place the cauliflower/ beetroot mixture , avocado,sprouts & cucumbers
  7. Start rolling away from you, keeping the roll tight.
  8. The miso paste should stick the roll at the end.
  9. Cut in slices and dip it in tamari sauce
Notes
  1. You can mix any vegetables
